 Willamette Valley Fresh Apple Cake

Ingredients:

  • 2 cups sugar
  • 3 eggs
  • 1 cup vegetable oil
  • 1/4 cup apple cider
  • 3 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 tsps. ground cinnamon
  • 2 tsps. vanilla extract
  • 3 cups peeled and finely chopped granny smith or similar cooking apples
  • 1/4 cup candied ginger, diced
  • 1 cup chopped walnuts
  • 2 Tbls. vegetable oil
  • 1/4 cup powdered sugar

Instructions:

  1. Preheat the oven to 350 degrees F. Generously grease a 9 x 13 x 2 inch pan.
  2. In a large bowl, combine the sugar, eggs, oil, apple cider, flour, baking soda, salt, cinnamon and vanilla extract; and mix well.
  3. Fold apples, candied ginger, and walnuts into the batter.
  4. Pour the batter into the prepared pan and bake until a tester comes out clean, about 1 hour.
  5. Cool for 10 minutes then dust the cake with powdered sugar.
  6. Serve warm with vanilla ice cream.
