Chewy Chocolate Chip Cookies

Chewy Chocolate Chip Cookies from the cookbook Bite Me, by Julie Albert & Lisa Gnat.  Yields: 20-24 large cookies


  • 2 1/2 cups flour
  • 1/2 tsp baking soda
  • 1/4 tsp kosher salt
  • 1 cup butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2 1/2 cups milk chocolate chips


  1. Preheat oven to 325-degrees.  Line 2 baking sheets with parchment paper.
  2. In a medium bowl, combine flour, baking soda and salt.
  3. With an electric mixer, cream together butter, brown sugar and sugar on medium speed until well-blended.  Beat in vanilla, egg and egg yolk until light and fluffy.  On low speed, add flour mixture and chocolate chips, mixing just until flour disappears.
  4. Drop dough by 1/4 cup at a time, 2 inches apart on to the prepared baking sheets
  5. Bake for 15 minutes or until the edges are golden brown.  Remove from oven and allow to cool a few minutes before transferring cookies to a wire rack.
