Simply De-lite-ful: Hot Fudge Sundae Cake
Serves 8

A little cake and a little pudding in the same pan.  We even like pouring a little cold nonfat half-and-half over this before eating.
It’s rich and chocolaty.

Ingredients:
• 1 cup flour
• ¾ cup sugar
• 2 tablespoons cocoa powder
• 2 teaspoons baking powder
• ¼ teaspoon salt
• ½ cup milk
• 1 teaspoon vanilla
• ½ cup chopped nuts, optional
• 1 cup packed brown sugar
• ¼ cup cocoa powder
• 1 ¾ cups hottest tap water
• Nonfat whipped topping, nonfat ice cream, or nonfat frozen yogurt

Directions:
• Preheat oven to 350 degrees. 
• Mix flour, sugar, 2 tablespoons cocoa powder, baking powder and salt in ungreased 9x9-inch square pan. 
• Mix in milk and vanilla with fork until smooth. 
• Stir in nuts, if using, and spread mixture evenly in pan. 
• Mix brown sugar and ¼ cup cocoa and sprinkle over top of batter. 
• Pour hot water over batter and bake about 40 minutes. 
• While warm, spoon into dessert dishes and top with whipped topping, ice cream or frozen yogurt.

Rocky Road pudding cake:  Add 1 cup miniature marshmallows at the same time as brown sugar and ¼ cup cocoa.  Continue with rest of recipe as indicated above.
