Simply De-lite-ful: Orchard Salad

Orchard Salad with Citrus Poppy Seed Vinaigrette
Serves 6
Fresh, fruity, delicious, and healthy!

Dressing:
• 1 teaspoon frozen orange juice concentrate, or to taste
• 1 teaspoon vanilla extract
• 1/3 cup honey
• 1 tablespoon chopped onion
• ½ teaspoon salt
• 2 tablespoons white balsamic or rice vinegar or lemon juice
• 1 tablespoon Dijon mustard
• ½ cup canola oil
• ¼ cup water
• 2 to 3 teaspoons poppy seeds

Salad:
• 8 cups mixed salad greens
• 1 avocado, diced
• 1 cup grapes, halved
• 1 ripe pear, peeled, cored, and sliced
• 1 can drained mandarin oranges
• 2 green onions, white portions, chopped
• ¼ cup dried sweet cranberries
• ½ cup chopped roasted almonds


Directions:
• Put everything but the poppy seeds in blender and process until blended and slightly thickened. 
• Stir in poppy seeds. 
• Taste and adjust for salt as needed.

• Toss salad ingredients, except cranberries and almonds, together with just enough dressing to coat. 
• Top with cranberries and almonds.
