Mochi Waffles

  • One 12-ounce package brown-rice mochi
  • Canola, coconut, or grapeseed oil for greasing the waffle iron


  1. Preheat the waffle iron-- a classic waffle maker works better than a Belgian-style model.
  2. Unwrap the mochi slab and cut 1/4 inch slices from the slab with a sharp chef's knife.
  3. Lightly grease the waffle iron and place strips of the mochi into each waffle space.  Close the lid and cook for 2 minutes or more, until the mochi has melted together and puffed up into crispy waffles.
  4. Serve hot with your favorite toppings, such as 1 cup berries cooked with 1/2 cup maple syrup or 1/3 cup brown rice syrup whisked with 1/4 cup orange juice, or nut butter and banana slices.

Note:  Several brown-rice varieties of mochi are available, including plain, cinnamon raisin, cashew-date, and even chocolate.  All are delicious choices for this simple, whole grain breakfast.
