Crescent Roll-Ups

This recipe courtesy of The Cowboy Cook Jeff Tracy.

Here is an easy recipe; even Helen can do this one. Your guests at the Super Bowl party will think you are magical in the kitchen. It will be our little secret.  You can also create your own fillings, perhaps a completely vegetarian mixture or a combination of several cheeses.

Shrimp Stuffing

  • 1-2 tubes, premade crescent roll dough*
  • 2 oz. cream cheese room temp
  • 20-30 small shrimp
  • 2-3 oz. bagged cole slaw mix, chopped
  • Cocktail sauce (or a mix of ketchup and horseradish)
  1. Preheat oven to 350°.  Grease a cookie sheet.
  2. In a mixing bowl combine the cream cheese, shrimp and cocktail sauce. The cream cheese should be soft. Make sure all the shrimp are coated equally.
  3. On a bread board roll out the entire package of crescent roll dough and separate each roll.
  4. At the large end place 1 tbsp. of the filling mixture.
  5. Roll up the dough and shape into a crescent. Place on cookie sheet.
  6. Bake for 12-14 minutes or until lightly brown on top

Chicken Stuffing

  • 1-2 tubes, premade crescent roll dough*
  • 2 oz. cream cheese
  • 2-3 oz. bagged cole slaw mix, chopped
  • 6-8 oz. cooked chicken breast, chopped
  • 3-4 green onions, chopped
  • 2 tsp. pineapple juice
  • 3-4 pineapple chunks, chopped
  1. Preheat oven to 350°.  Grease a cookie sheet.
  2. In a mixing bowl combine all ingredients except for the crescent roll dough.  Mix thoroughly, making sure the chicken is evenly coated with the cream cheese and pineapple juice.

Ground Beef Stuffing

  • 1-2 tubes, premade crescent roll dough*
  • 8 oz. ground beef
  • 3-4 chopped green onions
  • 2 oz. cream cheese
  • 2-3 oz. bagged cole slaw mix, chopped
  • 2 tsp.  canned tomatoes and diced green chilies, chopped
  • Grated extra sharp cheddar or pepper jack cheese
  1. Preheat oven to 350°.  Grease a cookie sheet.
  2. Brown the ground beef and drain (Salt and pepper like you normally would).
  3. In a mixing bowl combine all the ingredients, except for the crescent roll dough, mixing them well.
  4. On a bread board roll out the entire package of crescent roll dough and separate each roll.
  5. At the large end place 1 tbsp. of the filling mixture.
  6. Roll up the dough and shape into a crescent.  Place on cookie sheet.
  7. Bake for 12-14 minutes or until lightly brown on top  * If you buy the extra large rolls you can cut them in half on the diagonal using a pizza cutter. This will make bite sized roll ups. Just use a smaller portion of the filling.
