Peanut Butter Chip Treats (a.k.a. Healthy Cookies)

Erin Crum’s Peanut Butter ChipTreats (a.k.a. Healthy Cookies)

These are what my mom called "peanut butter chip treats" but my sister and I named "healthy cookies".... back in the day my mom got on a health food kick and wanted to try some better for you recipes and found this one.  Of course, my sister and I assumed we would hate them, but ended up really liking them and still make them all the time today.  They have peanut butter chips in them, but can easily substitute for chocolate or butterscotch chips if anyone has a peanut allergy.


  • 1 beaten egg
  • 1 cup honey
  • 3/4 cup canola oil
  • 1/4 cup water
  • 1 tsp salt
  • 1 tsp vanilla
  • 3 cups quick cooking oats
  • 1 cup whole wheat flour
  • 3/4 cup wheat germ
  • 1 cup peanut butter chips
  • 1/2 cup sunflower seeds


  • In a bowl combine egg, honey, oil, water, salt and vanilla. 
  • In a mixing bowl, stir together oats, flour and wheat germ. 
  • Add liquid mixture to dry ingredients and mix well. 
  • Stir in peanut butter chips and sunflower seeds. 
  • Scoop dough, about 1/4 cup for each cookie, onto a cookie sheet and slightly flatten. 
  • Bake at 350 degrees for 18 - 20 minutes. 

Makes about 20 cookies
