Oba's Roasted Potato Salad
INGREDIENTS:  

  • Dijon Mustard 2 Tbsp. 
  • Egg Yolks 3 each 
  • Kosher Salt 1 1/2 tsp. 
  • Coarse Ground Black Pepper 3/4 tsp. 
  • Cayenneor Chipotle Pepper Powder 1/4 tsp. 
  • Olive Oil 1 cup 
  • Malt Vinegar 3 fl. oz. 
  • Fingerling Potatoes - sliced 1/4” 4 1/2 lbs. 
  • Red Onion - diced 1/4" 3/4 cup 
  • Red Peppers - seeded & diced 1/4" 1/4 cup 
  • Yellow Peppers - seeded & diced 1/4" 1/4 cup 
  • Poblano Peppers - seeded & diced 1/4" 1/4 cup 
  • Chives - sliced 1/8" 3/4 cup 
  • Kosher Salt-Pepper Mix as needed 
  • OPTIONAL: Cooked diced bacon, add to taste 


DIRECTIONS:

1. Roast the potatoes at 450º until they are tender and beginning to caramelize -- about 12-14 minutes.  Remove from oven and allow to cool slightly.

2. Meanwhile, in a stainless bowl whisk together the mustard, egg yolks and seasonings.  Add the oil slowly, alternating with the vinegar to form a mayonnaise.

3. Toss the potatoes with the dressing and season to taste.  Hold warm for service.
