1. Roast the potatoes at 450º until they are tender and beginning to caramelize -- about 12-14 minutes. Remove from oven and allow to cool slightly. 2. Meanwhile, in a stainless bowl whisk together the mustard, egg yolks and seasonings. Add the oil slowly, alternating with the vinegar to form a mayonnaise. 3. Toss the potatoes with the dressing and season to taste. Hold warm for service.
