Triple Chocolate Brownies
I developed this brownie recipe after tasting the kind that comes in the box. After eating one boxed brownie, my chocolate craving didn’t feel satisfied. So that’s why I developed this recipe using real ingredients and three types of chocolate. It’s a sure fire way to indulge – and satisfy – that chocolate craving!    -Chef Tse

Makes 9 brownies

  • 2 tablespoons plus 1 teaspoon unsweetened cocoa powder
  • 2 tablespoons hot water
  • 2.5 ounces good quality semisweet chocolate, in bar form, chopped
  • 2 tablespoons unsalted butter
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 1/2 cup (2.5 ounces) all-purpose unbleached flour
  • 1/2 cup (4 ounces) granulated sugar, plus 1 teaspoon
  • 1/2 teaspoon baking powder
  • 1/4 cup semisweet chocolate chips
  • Pinch of salt

Preheat oven to 350 degrees. Line an 8x8 baking dish with one long sheet of parchment paper. In a medium bowl, stir together cocoa powder and hot water. Let stand 5 minutes. In a small saucepan over medium low heat, melt chopped chocolate and butter. Whisk chocolate, vanilla, and egg into cocoa powder.

In a medium bowl, whisk together flour, 1/2 cup sugar, baking powder and salt. Pour in chocolate mixture and mix until just combined. Fold in chocolate chips. Pour into pan and smooth top with back of spatula. Bake in oven 20 to 25 minutes until a toothpick inserted in center comes out clean. Remove brownies using parchment paper and let cool completely.

Slice brownies into 9 squares and serve with fresh, seasonal fruit.
