Ricotta Pie

Ricotta Pie
This is another Italian recipe straight from grandma’s cookbook.  It’s like a light, refreshing version of Cheesecake - and much more guilt free! We always made it at Easter and ate it for brunch. – Erin Crum
 
Filling -- Mix thoroughly and set aside:
• 1lb ricotta
• 2 eggs
• 1 tsp vanilla
• 1/3 cup sugar (or more to taste) - yes thats how my grandmother wrote a lot of her recipes!
• 1 tsp lemon juice
 
 
Pie Dough -
(You can easily use a pre made pie crust, but here is a homemade version if you want a bit more effort.  If using a premade crust, I use one for the pie and cut the other one up for the lattice pattern on top.)

Mix these ingredients together in large bowl:
• 1 1/2 cup flour
• 1/4 cup sugar
• 1 tsp baking powder
• 1/8 tsp salt
• 1 stick butter

In smaller bowl, mix together these ingredients:
• 1 egg
• 1/8 cup milk
• 1/2 tsp vanilla
 
Add egg mixture to flour mixture until consistency of dough. 
Roll out pie dough and use enough to cover 1 pie pan and fill pie crust with ricotta filling
Use remaining pie dough to cut into strips and place in a lattice pattern across the top of the pie
 
Bake for about 1 hour in pre-heated 350 degree oven
