Mother's Day Rum Cake

Cake:

  • 1 cup chopped nuts
  • 18 1/2 oz pkg yellow cake mix
  • 3 3/4 oz package jello instant pudding
  • 4 eggs
  • 1/2 cup cold water
  • 1/2 cup oil
  • 1/2 cup dark or spiced rum

 
Pre heat oven to 325. 

Grease bundt pan and spinkle nuts over the bottom.  Mix ingredients and pour batter over nuts.  Bake for 1 hour then cool and invert onto serving plate and prick the top of the cake
 
Glaze:

  • 1/4 cup butter
  • 2 tbls water
  • 1/2 cup sugar
  • 1/4 cup rum
  •  

Melt butter in saucepan.  Stir in water and sugar.  Boil for 5-6 minutes stirring contantly.  Remove from heat, then add rum. 

Drizzle glaze evenly over the top and sides of the cake.  Allow cake to absorb and repeat. 

Chill before serving
