Vegan Yukon White Bean Basil Burgers

Serves 4

Ingredients:

  • 1 can white beans (cannelini, white pinto, etc.), drained and rinsed
  • 1/2 lb. Yukon gold potatoes, steamed
  • 2 cloves garlic, minced
  • 1 T. nutritional yeast
  • 2 tsp. lemon juice
  • 2 T. whole wheat pastry flour
  • 1/2 t. salt
  • ground black pepper
  • 1/4 c. chopped fresh basil

Instructions:

  1. Drain beans and steam potatoes and set aside.
  2. Add all ingredients except basil and smash with a fork, until beans and potatoes hold together, but not so mashed that you end up with mashed potatoes.
  3. Chop basil and stir in.
  4. Side note: Do you keep your fresh basil in water like flowers? Don’t bring me roses, bring me a bouquet of basil.
