Double Chocolate-Single Chin Brownies

Double Chocolate-Single Chin Brownies-- this recipe courtesy of Peas and Thank You: Simple Meatless Meals the Whole Family Will Love by Sarah Matheny

Ingredients:

  • 3/4 c. whole wheat pastry flour
  • 1/3 c. cocoa powder
  • 2 t. baking powder
  • 1/2 t. baking soda
  • 1/2 t. salt
  • 1 c. unsweetened applesauce
  • 1/2 c. organic sugar
  • 1 t. vanilla
  • 1/2 c. vegan chocolate chips

Instructions:

  1. Preheat oven to 350 degrees. In a large bowl, combine flour, cocoa, baking powder, baking soda and salt.
  2. In a smaller bowl, combine applesauce, sugar and vanilla.
  3. Add wet to dry and mix until just combined. Fold in chocolate chips.
  4. Pour batter into an 8×8 pan that has been sprayed with cooking spray.
  5. Bake for 20 minutes or until brownies are set and edges are coming away from the pan.
