Amaretti Angel Fluff Cake with Berries
This dessert is a little bit of heaven on a plate and so easy! Angel food cake dotted with pockets of amaretti dough and covered with pillowy Cream Fluff.
Prepare angel food cake batter according to package directions. Pour half of batter into dry angel food cake pan. Drop half of prepared Amaretti dough by about a scant teaspoon size drop, over surface of batter. Add remaining cake batter. Repeat with remaining Amaretti dough. Bake cake according to package directions. Cool and remove from pan. Sprinkle top generously with powdered sugar. Serve cake in slices topped with generous dollops of Crème Fluff, and fruit/nuts as desired.
Serving suggestion: You may use fresh fruit such as bananas, peaches, berries, even canned pie filling. This dessert can be served without the Amaretti if desired, in which case you could use a store-baked cake and serve with Cream Fluff and any of the above toppings.
Amaretti Cookie Dough
Grind almonds to a meal in food processor. Mix in sugar, egg whites or egg substitute, almond extract, and salt. Process about 15 seconds.
This is one of those miracles that happen in a kitchen with simple ingredients and fabulous results! It’s the little black dress of the dessert world: it can go with almost anything and can be converted to complement many flavors.
In large bowl fold together whipped topping and yogurt. Mix thoroughly, cover and refrigerate until ready to serve. Can make a day ahead.
Optional additions: Miniature marshmallows (do a great job of absorbing fruit juice), chopped nuts, well-drained crushed pineapple, bananas, fruit cocktail, crushed peppermint candy.
