Grilled Shrimp Zucchini Skewers

A delicious, light and versatile grilling meal.  Enjoy! -- Amy Roloff

  • 12 large shrimp
  • 12 thin zucchini ribbons
  • 1/4 cup olive oil
  • 1/4 tsp cayene pepper
  • 1 Tbl chopped fresh mint or basil
  • Sea salt or Kosher salt
  • Ground Pepper

Directions:

  • Pre soak wood skewers so shrimp and vegetables come off easy. 
  • Pre heat grill
  • skewer shrimp with zucchini between each piece. 
  • Stir together the remaining ingredients in a glass casserole dish. 
  • Place skewers in dish and cover and refrigerate for several hours to marinate, turning once or twice. 
  • Cook on the rgrill until the shrimp are pink and the zucchini has grill marks -- approximately 3 - 5 minutes each side.
