Simply De-Lite-Ful: Spinach Orzo Salad

Spinach Orzo Salad
SERVES 8 AS A MAIN COuRSE   • 555 CALORIES PER SERVING

This is one of our favorites!  We had something just like this at a restaurant and had to create our own to be enjoyed at home.

  • 1/3 cup sundried tomatoes, drained, chopped, and squeezed dry
  • 3 cups cooked orzo pasta
  • 7 cups coarsely chopped spinach
  • 1 cup fresh diced tomatoes
  • 4 green onions, finely sliced
  • ¼ cup pine nuts, optional
  • Parmesan cheese, optional
  • 3 grilled and sliced seasoned chicken breasts, optional (we suggest brushing very lightly with olive oil, a little lemon juice, garlic, onion powder, Italian seasoning, and salt/pepper)

LEMON VINAIGRETTE DRESSING
Makes about ¾ cup dressing

  •  2 to 3 tablespoons fresh lemon juice
  • 1 ½ tablespoons olive oil
  • 1 ½ tablespoons canola oil
  • 1 tablespoon nonfat plain yogurt
  • 1 tablespoon water
  • 2 teaspoons dijon mustard
  • ½ teaspoon garlic powder or
  • 1 small clove garlic, finely chopped
  • Salt and freshly ground pepper to taste

Toss orzo, spinach, sundried tomatoes, fresh tomatoes, green onions, pine nuts, and chicken if using, in large salad bowl. 
In separate bowl whisk dressing ingredients together.  Add desired amount of dressing to salad just prior to serving.   Adjust salt and pepper if needed.  Toss and garnish with parmesan if using.
