Whole Wheat Ginger Pear Waffles

Whole Wheat Ginger Pear Waffles
Makes approximately 6 waffles

  • 1 1/2 cups whole wheat pastry or white whole wheat flour
  • 3/4 teaspoon ground cinnamon
  • 1½ teaspoons ground ginger
  • ½ teaspoon ground nutmeg
  • 1 tablespoon organic sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sparkling water
  • 1/2 cup non-dairy or organic milk
  • 2 tablespoons canola oil
  • 1/2 teaspoon vanilla
  • 1 pear, peeled and chopped (approximately 1 cup)
  • Toppings: vegan margarine (i.e. Earth Balance) and maple syrup
  1. Preheat your waffle iron, first spraying with a cooking spray.
  2. Combine flour, spices, sugar, baking powder and salt in a large bowl.
  3. In a smaller bowl, combine the sparkling water, milk, oil and vanilla.
  4. Pour the wet ingredients into the dry, and stir until just combined. Gently fold in chopped pear. Do not overmix.
  5. Spoon about 1/3 cup of batter into each waffle well and close iron. Cook waffles for several minutes, until waffles are golden brown.
  6. Serve with vegan margarine and maple syrup.

Pea Points: Freeze these waffles in resealable plastic bags and then just pop them in the toaster like you would store-bought toaster waffles. These waffles are higher in fiber, lower in sugar and preservative free, not to mention far cheaper. Go ahead, Leggo of those other ones.
