Simply De-Lite-Ful: Soft Gingerbread Cookies

Soft Gingerbread Cookies
Makes about 36

The sweetly-spiced aroma of these cookies will fill your kitchen.


  • ¼ cup butter substitute
  • 1 cup brown sugar
  • ¼ cup egg substitute
  • ¼ cup molasses
  • 2 cups flour
  • 1 teaspoon ginger
  • 1 teaspoon cinnamon
  • ½ teaspoon cloves
  • 2 teaspoons baking soda
  • ¼ teaspoon salt
  • Granulated sugar


  • Preheat oven to 350°.
  • Cream butter substitute, brown sugar, egg substitute, and molasses together in large bowl. 
  • In a separate bowl, combine flour, ginger, cinnamon, cloves, baking soda, and salt. 
  • Add to creamed mixture and mix well. 
  • Chill dough for 1 hour to make dough easier to handle. 
  • Using ice cream scoop shape dough into ¾-inch balls and roll in granulated sugar.
  • Place on cookie sheet and bake 6 to 7 minutes depending on size.  Do not over bake.
