Egg White Veggie Omelette

INGREDIENTS:

  • 4 egg whites
  • ¼ cup chopped onion
  • ½ cup broccoli
  • 3 rings bell pepper, chopped
  • ¼ cup chopped mushrooms

INSTRUCTIONS:

Spray pan with Pam cooking spray and heat. Add onion, broccoli, bell peppers and mushrooms, cover pan. Stirring occasionally, cook for about 5 minutes, or to desired tenderness. Scramble egg whites in a bowl and pour over vegetable mixture in pan. As the egg whites begin to cook, be sure to mix so they are cooked thoroughly (about 1-2 minutes).

You can either serve inside a multi-grain wrap or over light wheat bread.

Serving size: 1 omelette

Calories per serving: 115

Multi-grain wrap – add 80-100 calories (depending on brand)

Light wheat bread – add 80 calories for 2 slices
