McCormick and Schmick's Cedar Plank Salmon

  • 1 filet of fresh salmon (2-4 pounds)
  • 1 cedar barbeque plank
  • lemon (sliced), black pepper, dill, garlic powder, salt and olive oil.
  • Season salmon to taste (pepper, spices, etc.), lightly sprinkle olive oil on top of plank, place salmon on heated plank skin side down, place lemon slices on top.

    Directions for un-treated plank

  • soak cedar plank under water for approximately 20 minutes, while barbeque is heating. Medium heat recommended.
  • place salmon skin side down on cedar plank
  • place in barbeque. A squirt bottle with water may be necessary to douse flame outbreaks around edges.
  • Cook approximately 8 minutes per pound. Cooking times may vary depending on thickness of fish. Longer cooking times may be necessary, because the plank absorbs more heat than items placed directly on the grill. For meat items, we recommend searing or browning before placing on plank.
  • Remove plank from barbeque. Serve and enjoy!
