Jake's Famous Crabcakes

Try this delicious recipe from one of Portland's oldest establishments!

Crab & Shrimp Cake Ingredients

2 ½ lbs Dungeness crab meat 1 ½ tsp Salt & pepper, 60/40 blend

3 ½ lbs Bay shrimp 2 each Whole eggs

13 oz Mayonnaise 7 oz Celery

1 tbsp Dry mustard 7 oz Onion

2 oz Worcestershire sauce 1 tbsp Old Bay seasoning

4 oz Dijon mustard, smooth 20 oz Panko bread crumbs

1 tsp Cayenne pepper 3 oz Lemon juice

1 oz Salad oil 1 oz Red pepper aioli

1 ea Lemon wedge


Sauce Ingredients

1 c Mayonnaise 1 tbsp Lemon juice

1 tbsp Fresh garlic 1 pinch White pepper

¼ c Roasted red pepper

(Blend well with hand wand or blender)

    Drain crab & shrimp for 15 minutes. Do not squeeze excess water out.

    Fine chop celery and onion

    Mix celery, onion, shrimp, mayo, eggs, cayenne, mustards, Worcestershire sauce, salt and pepper and old bay seasoning

    Mix well

    Add in 15 ounces of the panko bread crumbs and blend

    Add the crab and fold (do not over mix)

    Add the remaining panko bread crumbs & the lemon and blend lightly

    Portion into 2 ½ oz patties and sprinkle with panko bread crumbs

    Place in a medium hot skillet

    Allow to brown on the bottom about a minute and a half then flip and allow to brown on the other side

    Place on a plate and serve with sauce
