PRIME RIB SPICE RECIPE
Stuart Anderson's Restaurants½ CUP SALT
¼ CUP PEPPER
¼ CUP GRANULATED GARLIC
1 Tablespoon PAPRIKA
3 Tablespoons TYME, LEAF
3 Tablespoons MARJORAM, LEAF
Take a 10-12lb prime rib roast and rub heavily with prime spice.
Preheat oven to 450 degrees. Place prime rib on rack w/drip pan underneath.
Sear roast in 450-degree oven for 15-20 minutes, remove when brown.
Place roast on rack in preheated oven at 220 degrees with a drip pan underneath containing ½ inch of water. Cook 1 ½ hours, then check internal temperature every 15 minutes with calibrated meat thermometer, until prime rib roast reaches 130 degrees, add more water if necessary. The prime rib is now cooked to rare/medium rare. To cook roast to medium, increase heat to 300 degrees for approximately 15-25 minutes.
