Turkey Burger & Sweet Potato Fries

Turkey Burgers

Ingredients:

  • 1 lb lean ground turkey
  • 1/2 cup oat bran
  • 2 Tbsp finely ground flax seed
  • 2 egg whites
  • 1/4 cup low-fat chicken or vegetable stock
  • 1 clove garlic, passed through a garlic press
  • 1 Tbsp low-sodium soy sauce
  • Freshly ground pepper
  • Dash Worcestershire sauce

Preparation:

Combine all ingredients in a large mixing bowl. Tosca likes to use her bare hands. Just coat hands lightly with olive oil first to prevent sticking. Once mixed form mixture into about 9 patties.

Meanwhile, heat a griddle over medium-high heat. Spray with cooking spray. Place patties in pan. Brown on one side and then the other. Takes about 4-5 minutes per side.

Serve the burgers on any mutligrain bread of your choice. Serve with an assortment of lettuce greens, sliced tomato, sprouts, hummus and more conventional burger condiments.

Sweet Potato Fries

Ingredients:

  • 2 large sweet potatoes, skin on, well-scrubbed
  • 1 1/2 Tbsp best quality olive oil
  • 4 cloves garlic, passed through a garlic press
  • 1 Tbsp dried oregano, crumbled
  • 1 Tbsp fresh rosemary, chopped
  • Freshly ground pepper

Preparation:

Prehat oven to 450 degrees. Cut the potatoes into finger-like wedges. Place them in a bowl and toss with the rest of the ingredients.

Line a cookie sheet with Silpat or parchment paper. Place sweet potato wedges on the cookie sheet so the pieces remain separate from each other.

Bake for 30 minutes or until wedges develop a lovely golden color.
