Trail Mix Cookies

What a great idea: trail mix inside a delicious cookie! Crunchy almonds, rich walnuts,
and sunflower seeds are sweetened with dates and raisins and a hint of cinnamon. These cookies
travel well, so take them on your next hike, and see for yourself how yummy they are when enjoyed
in nature.


3⁄4 cup almonds
1 teaspoon ground cinnamon
Pinch sea salt, or to taste
1⁄4 cup walnuts
1 cup pitted Medjool dates
2 tablespoons raisins
2 tablespoons sunflower seeds

Combine the almonds, cinnamon, and salt in the food processor and pulse into chunks. Add the walnuts and pulse into chunks. Add the dates, raisins, and sunflower seeds and pulse to mix well. Scoop the dough by 11⁄2 tablespoons onto a sheet tray lined with parchment and flatten into cookies. Will keep for a week or more in your fridge or for several weeks in the freezer (thaw before eating).
