“Big Daddy” Donald’s “Kool” Mac n Cheese Salad


16 oz package elbow macaroni
2 hard boiled eggs, peeled and diced
1 c. cubed cheddar cheese
3/4 c. sweet pickle relish
2 c. finely chopped onion
½ c. olives (optional)
4 ribs of celery finely chopped
2 c. mayonnaise
½ c. sour cream
3/4 tsp. salt



In a large pot with salt, boil pasta according to package directions. Stir often. Drain and cool. In medium bowl cover, preferably overnight.

In a large pot with a dash of salt, add eggs on medium high heat. Bring to a boil. Cover and remove from heat. Let eggs sit for 6 to 7 minutes. Remove eggs and shock in ice water.

Once thoroughly cooled, peel eggs and roughly dice.

Place pasta in alarge bowl. Add onions, celery, eggs, relish, mayonnaise, sour cream, salt and pepper. Mix until well combined. Mix well cover and chill. More mayonnaise can be added before serving to moisten.
