Suggested Wood: Blend of Hickory and Oak Step by Step: Rub your brisket one hourto a day ahead of time. Make your fire slow and low: Feed hot coals to the fire rather than fresh coals, to keep a constant heat Tip: How much charcoal? How much wood. Depending on weather conditions, you will use about 10-12 punds of charcoal. For quantities of wood chunks or chips, factor about 1 cup per hour or 1-2 chunks per hour for the first 3-4 hours. If you're using an electric smoker, continue adding chunks of wood for the first 6 hours. If you are using wood as your fuel, you will use 12-20 pieces, depending on the size of your smoker. Place a water pan in the indirect side, under your meat. |
