Fuel Up French Toast Sticks

This is a great back-to-school breakfast solution for kids. Warm and delicious, this healthy take on French Toast provides protein, fiber, and calcium.


  •  3 eggs, lightly beaten
  •  1/2 cup fat-free milk
  •  1 tablespoon sugar
  •  1/2 teaspoon vanilla extract
  •  4 slices whole grain bread, cut into strips (4 strips per slice)
  •  2 cups whole grain flake cereal
  •  2 T. walnuts
  •  1-2 T. canola oil
      Dip Choices:
  • vanilla or fruit-flavored yogurt
  • light cream cheese blended with fresh berries
  • natural peanut butter blended with honey


  1. In a shallow bowl, whisk together eggs, milk, sugar and vanilla until blended. 
  2. Place cereal and walnuts in a plastic bag and crush finely with the use of a rolling pin.
  3. Lightly coat a large non-stick skillet with canola oil and heat over medium heat until hot. 
  4. Dip bread strips into the egg mixture, turning to soak both sides. Lightly coat in cereal/walnut mixture and place in skillet.
  5. Cook 4 to 5 minutes or until browned, turning once.
  6. Dip French toast sticks in yogurt, whipped cream cheese/fruit, or peanut butter/honey.
