(Helen's Favorites) Jamaican Jerk Shrimp Salad

Ingredients

  • 1 tablespoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1 pound fresh large shrimp, peeled
  • 1/4 cup fresh lime juice
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon sugar
  • 8 cups mixed salad greens
  • 1 (15-oz.) can kidney beans rinsed and drained
  • 1/2 cup dried banana chips (optional)

Directions

Preparation Time: 15 minutes
Cook Time: 10 minutes
Servings:      4

Preheat broiler.

In a small bowl, combine paprika, salt, allspice, cumin and cayenne pepper. Mix well. Rub seasoning mix evenly over shrimp and place on a broiler pan. Broil 4 minutes on each side or until thoroughly cooked.

Meanwhile, whisk together lime juice, olive oil, vinegar and sugar until sugar dissolves. Toss in a large bowl with salad greens and kidney beans. Divide salad evenly among plates and top with shrimp. Garnish with banana chips if desired.
