Spice Infused Whipped Cream
Whipped cream is a welcome addition to any treat, but there are a few ways to make it extra special. Adding a touch of your favorite sweet spices can go a long way towards adding the flavors of fall to a simple whipped topping. Typical recipes will have you add ground spices to the cream before whipping. However, this can leave an unpleasant, gritty feel in the final product. By infusing your cream with whole spices, which are removed prior to whipping, your whipped cream will have the flavor and none of the grit.
  • 1 C Cream
  • 3 Tbs Powdered Sugar             
Spices of your choice! Examples  for one cup of cream include:
  • Whole cinnamon stick
  • 3-4 whole cloves
  • 1-2 slices fresh ginger root
  • 2 – 3 tea bags of your choice, such as Chai or Earl Grey.
Let the spices and the cream mingle in the fridge overnight. If using tea bags, just drop them in as if you were making a tea out of the cream. Then simply remove your spices, add the powdered sugar, and whip with a whisk or electric mixer until soft peaks form. You may choose to whip it further, until the cream holds a firm peak, just be cautious that you don’t whip it into spiced butter (although…).
The spice quantities may be varied as well, depending on how prominent you want them to be. Keep in mind that the high fat content of cream can mask mild flavors, so don’t be afraid about putting in too much spice.
