Coconut Lime Chicken with Chilies

Ingredients

  • 2 teaspoons peanut oil
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 teaspoon curry powder
  • 14-ounce can light or regular coconut milk
  • 4-ounce can diced green chilies
  • 1 tablespoon fresh lime juice
  • 1 teaspoon finely grated lime zest
  • Salt and ground black pepper
  • 1/4 cup chopped scallions
  • 2 tablespoons chopped fresh cilantro

Directions

Heat oil in large skillet over medium heat. Add garlic and cook 1 minute. Add chicken and cook 5 minutes, until golden brown on all sides, stirring frequently. Add curry and cook 1 minute, until curry is fragrant. Add coconut milk, green chilies, lime juice, and lime zest and bring to a simmer. Simmer 5 minutes, until chicken is cooked through. Season to taste with salt and black pepper. Remove from heat and stir in scallions and cilantro.
