Veggie Delight -- Curried ChickpeasBy AMNW InternVeggie Delight - Curried Chickpeas INGREDIENTS: · 3.5 cups of rinse and drained chickpeas · ½ cup of chicken, vegetable broth or lemon juice · 1/3 cup of golden raisins · 1/3 cup of sauteed slivered almonds · 1.5 cups of store bought yellow curry sauce · 2 cups of cooked couscous (I like to cook it in chicken broth) INSTRUCTIONS: · In a frying pan or wok, cook and warm up the chickpeas (use canola oil spray to keep it from drying) · Add the chicken broth after the chickpeas are warmed up (you will notice steam rising) · Since the chickpeas are to be served warm, you can add the golden raisins and sauteed slivered almonds in at any time · Dress with the curry sauce and allow to all items to cook up and get to the same temperature · To enhance this meal, you can serve side by side with ½ cup of cooked couscous or mix it together for a ONE AND DONE meal! · ENJOY! Serve 4 people |
