Smothered Yardbird & Rice

Recipe from Mz. LaVerne, The Empress of Soul Food


  • 1 6lb fryer chicken cut up
  • 1 large onion chipped of sliced
  • salt, pepper garlic to taste
  • one can of cream of chicken soup
  • olive oil


  1. Wash chicken thoroughly. Heat olive oil in iron dutch oven or skillet. Season chicken pieces with salt pepper, garlic and paprika.
  2. Brown chicken pieces on both sides. Remove chicken from pan and add onions.
  3. Saute onion until transparent.Reduce heat and add chicken back to dutch oven or skillet . Add  one can of your favorite cream of chicken soup stiring until blended. Do not add water!
  4. Reduce heat to simmer and cover. Cook of low heat for approx. 30 min. Serve over steamed white or brown rice.
  5. Serves 6. For larger family double the recipe.
