Lawnmower Pasta

Serves 4

Ingredients:

• 1 8 ounce package pasta
• 1 bunch flat leaf Italian parsley
• 1 clove garlic, peeled
• 5 whole black peppercorns
• 1/2 cup freshly grated Parmesan cheese
• 1/4 cup extra virgin olive oil
• Salt

Directions:

• Place peppercorns in a plastic bag and crush with the back of a pan or a hammer.
• Coarsely chop parsley and garlic.
• Put parsley, garlic, peppercorns, and salt in the bowl of a mortar and pestle* and grind until it resembles a coarse paste.
• Slowly drizzle in the olive oil, a little at a time. Let stand at room temperature for 30 minutes.
• Bring a large pot of salted water to a boil.
• Add pasta, bring water to a boil, and cook according to package directions. Drain well.
• Place pasta in a large bowl and add parley puree and cheese.
• Mix well; taste and season with salt.
• Divide pasta among plates and serve immediately.


* Cooks note: if you don’t have a mortar and pestle, process everything in a small food processor. No food processor? Finely chop the garlic and parsley and grind the peppercorns. Mash everything with the back of a spoon and drizzle in the olive oil.
