Classic Pan Seared Steaks

Serves 4

1 tablespoon extra virgin olive oil
1 clove garlic, smashed
4 steaks of your choice
Salt and pepper

  • Preheat oven to 350 degrees.
  • Season steaks with salt.
  • Heat a large cast iron or stainless steel skillet over medium high heat.
  • Once hot, add oil and garlic; let oil heat until shimmering and just beginning to smoke.
  • Add steaks and sear until nicely colored, about 2 to 4 minutes per side.
  • Place pan in oven with steaks and cook to desired doneness.
  • Remove steaks from pan and let rest in a warm place, turning once or twice, about 5 minutes.
  • Season steaks with pepper if desired and serve hot.
