Avocado Black Bean Tacos

Avocado Black Bean Tacos



2 avocados - peeled, pitted, and diced
1 cup of cherry tomatoes sliced in half
3 cups black beans
1/3 cup green onions, diced
1/4 teaspoon of salt
6 corn tortillas or high fiber tortillas
1 bunch fresh cilantro leaves, finely chopped
1 small lime for added flavor



  • Preheat oven to 325 degrees F (165 degrees C). 
  • Drain and Rinse black beans and heat up on the stove to serve on warm tortillas
  • In a medium bowl, mix avocados, green onions, tomatoes- add a dash of salt to this
  • Arrange tortillas in a single layer on a large baking sheet, and place in the preheated oven 2 to 5 minutes, until heated through.
  • Top the tortillas with the avocado mixture.
  • Garnish with cilantro and sqeeze of lime
