Orange Pistachio Couscous

  • 1/4 Cup shelled pistachios
  • 1 1/2 cups whole wheat couscous
  • 1 1/2 cups boiling magic mineral broth
  • 1 tsp ground cumin
  • 1/2tsp coriander
  • 1 tsp sea salt
  • 1/8 tsp ground pepper
  • 1/2 cup chopped fresh mint
  • 2 tbs lemon juice
  • 1 tbs orange zezt
  • 2 tbs olive oil
  • 1/2 cup raisins


  • Preheat oven to 325 degress
  • Bake pistachios for 10 minutes until brown
  • Mix couscous, and borth in a bowl, cover and let sit for five minutes
  • Add cupid, corainder, sald and pepper. Stir and fluff with a fork
  • Spread couscous on a sheet pan, rake with a fork and let cool
  • Combine couscous and remaining infredients in a bowl and serve!
