Magic Mineral Broth

Ingredients

  • 6 unpeeled carrots, cut into thirds
  • 2 unpeeled yellow onions, cut into chunks
  • 1 leek
  • 1 bunch celery, cut into thirds
  • 4 unpeeled red carrots
  • 2 unpeeled japanese sweet potatoes
  • 1 unpeeled garnet yam
  • 5 unpeeled garlic cloves
  • 1/2  parsley
  • 1 8 inch strip of kombu
  • 12 black peppercorns
  • 4 whole spice or juniper berries
  • 2 bay leaves
  • 8 quarts water
  • 1tsp sea salt

Directions

  • In a 12 quart pot, combine all ingredients and fill with water
  • bring to a boil
  • simmer uncovered for 2 hours
  • strain broth through a sieve
  • let cool to room temperature before freezing

Makes 6 Quarts
