Chef Tse: Homemade Sloppy Joes

Homemade Sloppy Joes
From the kitchen of Chez Tse

Sloppy Joes are so simple to make at home and this homemade version tastes ten times better than the stuff in a can! I like using grass fed ground beef because it has a better flavor, but you can use turkey, chicken, pork or even buffalo. If you prefer a vegetarian version, simply substitute the meat for your favorite, seasonal chopped vegetable. To save time, make a double or triple batch and freeze the leftovers. It makes a great time saving meal later on.

Serves 4

  • 1 pound ground sirloin (5% fat)
  • 1 tablespoon olive oil, divided
  • 2 cloves garlic, peeled and diced
  • 1 small white onion, peeled and finely diced
  • 1 small carrot, peeled and finely diced
  • 1 small stalk celery, finely diced
  • 1/2 cup unsalted tomato paste
  • 1 cup water
  • 2 tablespoons ketchup
  • 2 teaspoons Worcestershire
  • 1/2 teaspoon paprika
  • 1/2 chili powder
  • Hot sauce to taste
  • 4 whole wheat hamburger buns, toasted
  • Salt and pepper

Heat a medium skillet over medium high heat. Add 2 teaspoons olive oil and once hot, add half the ground beef in large pieces to pan. Sear on both sides until brown. Remove beef and set aside. Repeat with remaining beef.

Return skillet to medium heat, add remaining teaspoon of oil and once hot, add garlic, onion, carrot and celery with a pinch of salt, scarping any brown bits from bottom of pan. Sauté until vegetables begin to brown. Mix in tomato past and let cook 1 minute, stirring often. Add water, ketchup, Worcestershire, paprika, chili powder and hot sauce. Cover, reduce heat to low and simmer 10 minutes.

Add ground beef to sauce, break up into smaller chunks and cook just until heated through, about 2 minutes. Taste and adjust seasoning with salt and pepper if desired. Divide sauce among buns and serve.
