Gluten-Free Raspberry Mousse

Raspberry Mousse
 
1 and 1/2 cups fresh raspberries
I can coconut cream (you can buy this or use 1 can full fat coconut milk and add 1/2 a package of the Coconut Cream to thicken it even more!)
Juice from 1 lemon
3 T raw honey
1 and 1/2 T gelatin
 
Put all of the ingredients except the gelatin into a blender and process to smooth.
Dissolve the gelatin in 1/4 cup boiling water - let cool slightly but not too much.  Add to blender mix and process just to blend in gelatin.  Do not over-process.
Pour into individual glass cups, or a single glass bowl.  Chill in regrigerator - it will set like jello.  Decorate with berries and mint sprigs.  Enjoy!
