Greek Penne Pasta with Shrimp
An easy solution to a delicious, fast, kid-friendly family meal 
  • 8 oz. uncooked multi-grain penne pasta1
  • 2 tbsp. olive oil
  • ½ c. chopped Vidalia onions
  • 2 cloves garlic, minced
  • 8 oz. uncooked shrimp, peeled and deveined
  • 5 c. baby spinach
  • ¼ c. rice vinegar
  • 1 c. grape tomatoes, cut into halves
  • ½ c. Kalamata or black olives, cut into halves
  • 4 oz. crumbled feta cheese
  • ¼ c. chopped, fresh basil 
1Options include whole wheat, pasta “plus” varieties (which incorporate legumes) or gluten-free varieties such as quinoa pasta or brown rice pasta
 
Cook pasta according to package directions; drain and keep warm. Saute onion, garlic and shrimp in olive oil for 2-3 minutes until shrimp turns pink and opaque. Add spinach and rice vinegar to pan. Stir and cook for an additional minute. Add mixture to pasta, along with tomatoes, olives, feta cheese and basil. Heat mixture for 2-3 minutes and serve immediately.
