Grilled Wild Caught Oregon Albacore with Summer Herb Sauce and Heirloom Tomatoes

Wild Caught Oregon Albacore,………………………1 lbs.
Salt/Pepper……………………………………………..to taste

Heirloom Tomatoes, Sliced………....…………………as needed

Sauce:

Olive Oil………………………1 cup

Shallots minced………………1 tbsp.

Parsley, chopped……………...1 tbsp.

Dill, chopped…………………..1 tbsp.

Basil, Julienne…………………2 tbsp.

Capers,…………………………1 tbsp.

Olives Nicoise, chopped……..…1 tbsp.

Lemon Juice…………………….1/2 lemon

Salt/Pepper………………………to taste

Combine all ingredients for sauce, reserve at room temperature.
Cut Albacore into medallions and grill until medium rare in the middle (do not over cook) 1-2 min. each side depending on thickness.

Serve with Sliced tomatoes and Summer Herb sauce.
