                                            Island Style Chicken Salad with Quinoa

2 cups  Cooked Chicken, diced in small pieces

1 cup    Cooked Quinoa

1/2 cup  fresh coconut  (if you use dried coconut, use unsweetened, flaked)

Diced Chili Peppers

Juice from 1 lemon

Salt and Pepper to Taste

Wrap Chicken Salad in Green Leaf Lettuce & Make Lettuce Wraps OR

Serve Over a Bed of Fresh Spinach OR Serve in a Bowl and ENJOY!
