Jicama, Pear and Grapefruit Salad

Jicama, Pear and Grapefruit Salad from Quick and Easy Paleo Comfort Foods

Yield: 3-4 side  servings

Ingredients
1 red grapefruit
1 small jicama, peeled and julienned
3-4 ripe pears, cored and sliced thin
1/4 cup fresh mint leaves, chopped
2 tablespoons freshly squeezed lime juice (from about 1 lime)
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon cayenne pepper

Instructions
1. Cut peel and pith from grapefruit. Slice along the membranes to release the grapefruit segments. Cut the segments into small pieces.

2. In a medium bowl, combine jicama, pear, and all remaining ingredients. Fold in the grapefruit pieces.

Variations: Get creative with what you decide to use here. Blood oranges instead of grapefruit would make this even sweeter and brighter. Some mangoes would also be particularly sweet and tangy.
