Not Just Baked: Blueberry Hazelnut Crisp
Blueberry Hazelnut Crisp with Goat Cheese Whipped Cream
What a mouthful that title seems to be? A perfect fit for this treat, you'll be stuffing your mouth with this dessert in a classy way. I try to keep our ovens off as much as possible in the hot weather, but who are awe kidding? Some of the best fruit desserts come from fresh Summer fruits, so we kinda have to turn the ovens on for them. So do it early in the morning, no regret follows, especially when you take a bite of this blueberry crisp. Living in the Northwest, I topped it off with Oregon hazelnuts, and local oats. I went a little different on the whipped cream this time, and did a whipped goat cheese cream. Basically whipped cream with whipped goat cheese added to it, and yes it is so good! I love goat cheese and fruit together, they like each other a lot.
Note: Taste the berries you are using. Adjust the sugar as needed. If the fruit is super sweet, use less sugar.
Place rack in center of oven and preheat oven to 375 degrees. Butter an 8 inch baking pan. You can use a variety of them from pyrex, cast iron, pie tin, or pretty ceramic. Just pick one that is about 8 inches.
