Oatmeal Granola & Lolly Energy Bars

Granola
 
1/4 cup honey
1/4 cup Soybean oil
1 tsp pure vanilla extract
1 tsp pure almond extract
1 tsp cinnamon
Mix above in small sauce pan and heat until blended and smooth, mixing constantly.  Set aside.
 
In a large bowl, mix the following:
 
2-1/2 cups bran flakes (any brand will do)
1-1/8 cups oatmeal (old fashioned)
1/4 cup flax meal
1 cup sliced almonds
1 cup walnuts, coarsley chopped
2/3 cup flaked, shredded or shaved coconut (sweetened or not)
 
3/4 dried cranberries, raisins or other dried fruit (add after baking is done)
 
Preheat oven to 325 degrees.  Prepare large rimmed baking sheet with spray oil (Pam).  Drizzle the warmed honey mixture over the dry mixture and toss to coat.  Pour mixture into baking sheet, spreading evenly.  Bake until golden brown, about 25 minutes, stirring every 5 minutes.  Remove from the oven, add dried cranberries and mix.  When completely cooled, place in an airtight container at room temperature.  Eat plain or sprinkle some into cooked oatmeal or on any type of yogurt.   Makes about 6 cups of granola - about 280 calories for each 1/2 cup serving.
 
 
Lolly Energy Balls
 
1 cup old fashioned oatmeal, slightly ground in a blender or food processor to break down
1/4 cup almond butter
1/4 cup sunflower butter
1/3-1/2 cup honey (add 1/3 cup first and use additional honey after you start mixing to get mixture sticky enough to roll into balls)
1/2 cup small coarsley chopped dark chocolate (at least 50% or semi-sweet chocolate)
1 cup shredded or flaked coconut (sweetened or not)
1/2 cup flax meal
1/3 cup chia seeds
1 tsp pure vanilla extract
 
Place dry ingredients into mixing bowl, add wet ingredients and mix thoroughly until dough is (not too sticky and not crumbly) firm enough to roll into 1" balls.  Place balls on sheet of wax paper and then after they have set for about 30 minutes, put in airtight container.  Good for at least one week at room temperature or refrigerate them to last longer.  Makes approximately 40 balls - about 54 calories each.
