You arrive home from a long day at work, carpool, and/or sports for the kids and all you want to do is get a quick, nutritious meal on the table for you family.
In less than 5 minutes flat you can make this powerhouse of a 'fast food' dinner that everyone is sure to love! It will leave you feeling satisfied and not weigh down your body or your mind for the rest of the night.

This 'Super Bowl" can be eaten warm or cold... and it also stores nice for lunch the next day. (NOTE: If you store it overnight, be sure to squeeze a little extra fresh lemon on it before enjoying it as a leftover.)
**The hardest part about this recipe is being prepared. If you are regularly on the go and short on time for dinner, I highly recommend keeping a batch of quinoa pre-cooked in your fridge so that you always have it on hand as a foundational ingredient for a variety of 'super bowls'. Cook a big batch of it on Sunday night and it will keep in the fridge through Friday.
