Savory Cranberry Compote

Serves 8

  • 1 teaspoon olive oil
  • 1/2 small white onion, peeled and thinly sliced
  • 1 1/2 cups fresh cranberries
  • Zest of 1/2 lemon
  • 1/4 cup water
  • 1 tablespoon honey
  • 2 teaspoons lemon juice
  • Salt and pepper

Heat oil in a medium saucepan over medium heat. Add onion, a pinch of salt and sweat until onions turn translucent, about 4 minutes. Add cranberries, lemon zest, water, honey, lemon juice and a couple grinds of pepper. Bring to a boil and reduce heat to medium low. Simmer uncovered until cranberries have popped, liquid has evaporated and compote is consistency of jam, about 15 minutes. Remove from heat; taste and season if desired.
