Simply De-Lite-Ful: Chicken Crunch Salad

Chicken Crunch Salad
 
This is a meal in a salad with flavors that meld beautifully.  We like this salad served on open lettuce leaves, sandwiched as a filling between slices of delicious bread, or wrapped in flatbread.

•    3 cups seasoned cooked chicken breast, cubed or shredded
•    1½ cups diced celery
•    1 cup grapes, halved
•    ¼ cup chopped, roasted almonds, optional
•    ½ cup nonfat mayonnaise or Smart Balance mayonnaise
•    ¼ cup sweet pickle relish
•    2 tablespoons diced onion
•    Salt and pepper to taste

Toss all ingredients together.  Keep refrigerated until ready to serve. 

SERVES 6-8
