On-the-Go Power Breakfast
Makes 4 dozen walnut-sized pieces.
Put all ingredients -- except chocolate chips -- in a large mixing bowl. Using cookie paddles or a dough hook, mix until completely incorporated in a mass.
Stir in chocolate chips, if using.
With an ice cream or cookie scoop, form into walnut sized balls and put in single layer in airtight container. You can make a second layer with plastic wrap between the layers.
Refrigerate untill ready to grab and go for a yummy, nutritious breakfast.
