Saucy Spicy BBQ Sliders
Combine meat, seasoning salt and pepper in a bowl and mix till well blended. Form the meat into 12-16 (or so) miniature patties that are about 21/2 inches in diameter and about ¾ inch thick. Spray skillet with nonstick spray. Add oil and let heat to spread oil. Add patties to skillet and cook over medium high heat until just about done in the middle, approximately 3 minutes per side. Remove the patties from the skillet and set aside.
Reduce heat slightly. Re-spray pan and add the diced onions to the skillet. Stir to cook, about 3 minutes till browned, but not burned. Pour in broth or whiskey and stir as it boils. Allow the liquid to reduce by half, about 2 to 3 minutes, then stir in jalapenos and the barbecue sauce.
Reduce the heat to low and place the patties in the barbecue sauce, turning to coat. (These can be made ahead to this point and refrigerated till ready to heat and serve.) Allow the patties to simmer in the sauce until everything's hot and bubbly. (I spoon more sauce over the tops as they simmer.) In the meantime, split, the rolls and spread very lightly with heart healthy butter substitute.
Before serving, if sauce has reduced too much, add a little water (a spoonful at a time) to thin just a little. The sauce should not be runny.) Place a patty on one half of each bun and be sure to spoon extra sauce (with the jalapenos!) over the top of each one before topping with the other half of the bun. All ready to serve. Yummy!
